Method
For the marinade, grind all the ingredients into a smooth paste and rub into the lamb. Keep aside for 2 hours in a cool place.
Heat the oil in a heavy-bottomed pan; add onions and sauté till opaque. Add the marinated lamb and sauté till the liquid evaporates.
Add salt, bay leaf, green cardamom, red chilli powder, garam masala, and cashew nut paste; mix well, stirring continuously. Add 1 cup water; simmer on low heat till the lamb is three quarter cooked.
Add yoghurt and stir continuously till the liquid evaporates. Cover the pan with a lid for 25 minutes and cook on low heat till the lamb is fully cooked and tender. Add cream, saffron mixture, and vetivier essence; mix well. Serve hot garnished with green coriander.
